Receta de juernes / Recepie for Thursday

Hola a todos. Es de verdad un alivio poder publicar. De nuevo tengo el ordenador roto y tengo que robar momentos para poder publicar en ordenadores ajenos. Pero hoy me apetecía muchísimo publicar estas fotos tan chulas, con receta incluída. Para empezar el Juernes a tope. (lo siento, solo está en inglés)

Hello everyone. It´s a big relief to post here. Again, my computer is broken and I have to steal moments to post in someone elses computer. But today I really wanted to post this beautiful pictures and the receipe. To start the Thursday-Friday (in Spanish there is a slang word for this moment, when is Thursday but almost Friday).







Berry loaf cake with icing
500 ml flour
2 tsp baking powder
pinch of salt
100 g softened butter
250 ml sugar
1/4 tsp vanilla powder (or 1 tsp vanilla sugar)
2 large eggs (room temperature)
125 ml milk (room temperature)
200 g berries (I used both fresh and frozen blueberries and raspberries but use whatever you like!)
1 tbsp flour
Icing
250 ml / 1 cup powdered sugar
1 1/2 – 2 1/2 tbsp milk or cream
Extra berries for decoration
Preheat oven to 175°C (350F). Butter a loaf pan/bread pan and line with baking paper. Mix flour, baking powder and salt in a bowl and set aside. Beat butter, sugar and vanilla until creamy. Beat in the eggs, mixing after each addition. Beat in half of the flour mixture. Add milk and mix to combine, then add remaining flour mixture. Mix until just combined. In a bowl, mix berries with 1 tbsp flour. Fold berries into the batter. Transfer batter to the prepared pan. Bake for about 45-60 minutes (start checking with a toothpick after 45).

Icing
Mix powdered sugar with milk or cream in a bowl until you reach desired consistency. Pour over completely cooled cake and decorate with blueberries.
